Meal Plan February 25 to March 2

I’m so proud of how we did this month. We spent VERY little money and stayed on or under budget. When the kids needed new clothes, I went thrifting. We were out of breakfast stuff this morning I made pancakes from scratch and it was really fun and nice with the kids. I think we’re definitely going to either hit or come very close to my goal I set for the month of getting the mortgage under $100G.

I shopped the pantry and got two meals out of what we already had:

Sunday: Slow Cooker Potato Soup

Monday: Spaghetti and Meatballs (I’ll be buying a loaf of crusty bread to go with this).

The kids are going back to school after spring break this week though so we have to restock on a ton of snack and lunch things.

The dog food recipe I tried this week was a big hit. I tweaked one that I found online that was vet approved and it lasted all week for my 40 lb dog:
2lbs ground chicken (the original was turkey that was way too expensive): $6.84
2 cups brown rice (I might cut back to 1 1/2 cups): $1.64- good for more than one batch
1 large bag of frozen mixed veggies: $.98
Total: $9.46, $17.21 less per week than the Fresh Pet bag of the same size we were buying.

Tuesday
Marry Me Chicken with mashed potatoes
I never actually made this last week so I have essentially everything except the chicken.

Wednesday
Tortellini Skillet
This was so good last week and I’ve been craving it.

Thursday
Baked Potatoes
I have a huge bag of baking potatoes in the pantry so I’ll just need to get the toppings.

Friday
Veggie Stir Fry and Rice
Easy one for when I’m working and my spouse is working from home.

Saturday
Crockpot Garlic Parmesan Chicken Pasta
I’ve been watching a video on IG to crack this recipe. From what I see I *think* its:
To a crockpot add:
3-4 chicken breasts
1 bottle of Buffalo Wild Wings Parmesan Garlic sauce, then refill the empty bottle with milk, shake and add the milk
1 package of cream cheese cut into pieces
1 cup shredded parmesan cheese
Cook on low for 4 hours or high for 2 hours, then shred chicken and add cooked rigatoni.
Stir together and top with more shredded parmesan.

  1. The Marry Me chicken looks good. That’s nice your dog eats the veggies, I give our dog table scraps once in a while and he will eat around all the cooked vegetables and just eat the meat and starch lol
